Ingredients

  • 4 tablespoons unsalted butter

  • 2 large onions

  • 1 teaspoon sugar

  • 1 teaspoon salt

  • 4 cups beef broth

  • 0.5 cup dry white wine

  • 4 slices of baguette

  • 1 cup Gruyère cheese

  • 2 sprigs fresh thyme

Directions

  • Peel and thinly slice the onions. Melt the butter in a large saucepan over medium heat until it bubbles gently.
  • Add the sliced onions, sugar, and salt to the saucepan. Stir occasionally and cook until caramelized and golden brown for about 30 minutes.
  • Pour the beef broth and white wine into the saucepan. Add thyme sprigs and bring to a boil, then reduce heat to a simmer.
  • Adjust seasoning, if necessary. Simmer for 20 more minutes, allowing the flavors to meld beautifully together.
  • Preheat your broiler. Ladle soup into oven-safe bowls, top with baguette slices, and generous portions of grated Gruyère cheese.
  • Place bowls under the broiler until the cheese is bubbly and golden brown, taking care not to burn them.
