Ingredients

  • 4 boneless, skinless chicken breasts, cut into 1-inch cubes

  • 3 tablespoons olive oil

  • 2 tablespoons fresh lemon juice

  • 2 teaspoons lemon zest

  • 3 garlic cloves, minced

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh thyme leaves

  • 1 teaspoon smoked paprika

  • Salt and pepper to taste

  • For the Skewers
  • 1 large red onion, cut into chunks

  • 1 red bell pepper, cut into 1-inch squares

  • 1 yellow bell pepper, cut into 1-inch squares

  • 1 zucchini, sliced into thick rounds

Directions

  • Prepare the marinade:
  • In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, paprika, salt, and pepper.
  • Marinate the chicken:
  • Add chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 2 hours (or overnight for deeper flavor).
  • Assemble the skewers:
  • Alternate chicken pieces with vegetables (red onion, bell peppers, and zucchini) on skewers. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Grill the skewers:
  • Preheat the grill to medium-high heat. Place skewers on the grill and cook for 10–12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are lightly charred.
  • Serve:
  • Transfer skewers to a serving platter, garnish with extra lemon wedges and fresh herbs if desired.
