4 boneless, skinless chicken breasts, cut into 1-inch cubes
3 tablespoons olive oil
2 tablespoons fresh lemon juice
2 teaspoons lemon zest
3 garlic cloves, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
1 teaspoon smoked paprika

1 large red onion, cut into chunks
1 red bell pepper, cut into 1-inch squares
1 yellow bell pepper, cut into 1-inch squares
1 zucchini, sliced into thick rounds
Directions
- Prepare the marinade:
- In a large bowl, whisk together olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, paprika, salt, and pepper.
- Marinate the chicken:
- Add chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 2 hours (or overnight for deeper flavor).
- Assemble the skewers:
- Alternate chicken pieces with vegetables (red onion, bell peppers, and zucchini) on skewers. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Grill the skewers:
- Preheat the grill to medium-high heat. Place skewers on the grill and cook for 10–12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are lightly charred.
- Serve:
