4 tablespoons unsalted butter
2 large onions
1 teaspoon sugar
1 teaspoon salt
4 cups beef broth
0.5 cup dry white wine
4 slices of baguette
1 cup Gruyère cheese
2 sprigs fresh thyme
Directions
- Peel and thinly slice the onions. Melt the butter in a large saucepan over medium heat until it bubbles gently.
- Add the sliced onions, sugar, and salt to the saucepan. Stir occasionally and cook until caramelized and golden brown for about 30 minutes.
- Pour the beef broth and white wine into the saucepan. Add thyme sprigs and bring to a boil, then reduce heat to a simmer.
- Adjust seasoning, if necessary. Simmer for 20 more minutes, allowing the flavors to meld beautifully together.
- Preheat your broiler. Ladle soup into oven-safe bowls, top with baguette slices, and generous portions of grated Gruyère cheese.
- Place bowls under the broiler until the cheese is bubbly and golden brown, taking care not to burn them.
