Ingredients

  • 1 tablespoon olive oil

  • 2 cups coconut milk

  • 3 tablespoons green curry paste

  • 1 cup vegetable broth

  • 1 cup broccoli florets

  • 1 cup sliced bell peppers

  • 1 cup sliced carrots

  • 1 cup snap peas

  • 1 tablespoon soy sauce

  • 0.5 cup fresh basil leaves

  • 1 tablespoon lime juice

Directions

  • Heat the olive oil in a large pan over medium heat, and add the green curry paste. Stir for 2 minutes until fragrant, ensuring the paste doesn’t burn.
  • Pour in coconut milk and vegetable broth into the pan, stir, and bring it to a gentle simmer, reducing heat if necessary.
  • Add the broccoli, sliced bell peppers, carrots, and snap peas. Stir well to coat the vegetables with the curry sauce.
