Ingredients
1 tablespoon olive oil
2 cups coconut milk
3 tablespoons green curry paste
1 cup vegetable broth
1 cup broccoli florets
1 cup sliced bell peppers
1 cup sliced carrots
1 cup snap peas
1 tablespoon soy sauce
0.5 cup fresh basil leaves
1 tablespoon lime juice
Directions
- Heat the olive oil in a large pan over medium heat, and add the green curry paste. Stir for 2 minutes until fragrant, ensuring the paste doesn’t burn.
- Pour in coconut milk and vegetable broth into the pan, stir, and bring it to a gentle simmer, reducing heat if necessary.
- Add the broccoli, sliced bell peppers, carrots, and snap peas. Stir well to coat the vegetables with the curry sauce.
- Let the vegetables cook in the curry for about 10 minutes or until they are just tender, stirring occasionally to ensure even cooking.
- Stir in the soy sauce and lime juice. Taste the curry, adjusting seasoning as needed for salt and acidity balance.
- Remove the curry from heat, and stir in fresh basil leaves. Allow them to wilt slightly before serving.
