Ingredients

  • 8 Lamb chops (bone-in, about 1 inch thick)

  • 2 tbsp Olive oil

  • 2 Cloves garlic, minced

  • 1 tbsp Fresh rosemary, chopped (or 1 tsp dried rosemary)

  • 1 tbsp Fresh thyme leaves (or 1 tsp dried thyme)

  • 1 tsp Ground cumin

  • Salt and freshly ground black pepper to taste

  • Juice of 1 lemon

  • For the Mint Sauce
  • 1 Cup fresh mint leaves, finely chopped

  • 2 tbsp White vinegar (or apple cider vinegar)

  • 2 tbsp Sugar (or honey for a healthier alternative)

  • 1/4 Cup warm water

  • Pinch of salt

  • 1 tbsp Olive oil

Directions

  • In a bowl, combine the olive oil, minced garlic, rosemary, thyme, ground cumin, salt, pepper, and lemon juice.
  • Rub the marinade mixture evenly over the lamb chops.
  • Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
  • For the mint sauce, combine the chopped mint leaves, vinegar, sugar, warm water, and salt in a small bowl.
  • Stir well until the sugar dissolves.
  • Add olive oil to the mint sauce mixture and stir again. Set aside for about 15 minutes.
  • Preheat the BBQ grill to medium-high heat.
  • Place the lamb chops on the grill and cook for 4–5 minutes on each side for medium-rare, or longer for your preferred doneness.
  • The internal temperature should reach 130°F (54°C) for medium-rare, 140°F (60°C) for medium.
  • Remove the lamb chops from the grill and let them rest for a few minutes before serving.
  • Serve with the mint sauce drizzled over the chops or on the side for dipping.

Notes

  • Tips:
    1. Pair the lamb chops with a light salad, roasted vegetables, or a fresh cucumber salad to balance out the flavours.
    2. For a more robust flavour, you can add a tablespoon of Dijon mustard or honey to the marinade.
