Joshua’s culinary journey began long before Chez Josh was a reality. Born in Vietnam, Joshua’s earliest memories are filled with the rich aromas and flavours of Southeast Asian & French cuisine.
01. The Beginning
Appetiser (noun)
When Joshua was just three years old, the family moved from Vietnam to Melbourne. By the time he was five, they relocated to Mauritius, where Joshua’s passion for cooking truly began to take shape. Surrounded by the vibrant fusion of French, Creole, and island flavours, Joshua developed a deep appreciation for cooking.
03. Defiance
Main Course (noun)
The values of hard work, advocacy, and inclusivity instilled in him through mentors are apparent. Today Joshua has honed his culinary skills at the Canberra Institute of Technology, works at a five-star hotel in Canberra, gives back through volunteer work… all whilst building the Chez Josh business and brand.
02. Challenges
Entrée (noun)
Joshua’s journey was not without its challenges. Born with an intellectual disability due to a congenital brain malformation, he faced barriers in traditional learning environments. With a strong support network, Joshua learnt to embrace his love for food and used it to overcome obstacles and forge ahead., proving that passion and resilience can lead to great things.
04. The Destination
Dessert (noun)
As Chez Josh expands, the brand continues to embody Joshua’s vision: a culinary movement that connects people, celebrates food, and shares the joy of cooking with the world. From inspiring recipes in our digital cookbook, and soon, Three Kings & meals served through a gourmet food truck, Chez Josh is only just beginning its journey.

2024 see’s the Chez Josh digital cookbook, a platform designed to inspire home cooks with carefully curated recipe collections that aim to revitalise how people interact with recipes through an intuitive digital cookbook experience. The cookbook carefully assembles and aggregates relevant recipes for lifestyle events (e.g. date night), it’s a lifestyle guided for food lovers everywhere.
